Banana muffins with whole grains should be a basic food in your home. I cannot believe that I did not publish this recipe.
A few weeks ago, I used Kodiak Mix to create a Kodiak pancake recipe. He understood bananas and I think this recipe could easily make muffins.
But what happens if you don’t have Kodiak Mix? Nevermind!
What makes these healthier that your ordinary muffin is 1/4 cup of sugar – most recipes require 3-4 times this quantity. You don’t really need it when you prepare bananas.
The sugar added by muffin is 3 grams (and the rest comes from natural sugar in bananas). I once encountered a muffin with 20 grams of sugar – alias a sugar bomb. You don’t need it to have a delicious muffin.
This recipe requires whole wheat flour (I used white whole wheat because it is almost the same). I know it can be difficult to find, so use the flour you have.
Muffic cups become about 2 / 3rd full when using the dough for 12 muffins.
Now you can choose what to put on them! They could be naked or you could add whole oats, coconut, pepitas, chopped nuts… ..
I used pepitas, whole oats and coconut – do they not look good?
Adding interesting garnishes is useful if your family has nut allergies (like mine) so that some people can have nuts and others can do without it. They also make them more interesting because the bananas and the whole wheat can be a bit dull.
These are perfect breakfast (if you go anywhere), a snack with a coffee or even a dessert. They freeze well so that you can make a heap for later.

Banana muffins with whole grains
Made 12 muffins
Preparation time: 10 min
Cook time: 20 minutes
Ingredients
2 large bananas, puree
1/2 plain yogurt cup (non -fat or whole milk)
1 egg
1/4 brown sugar cup
1/4 cup of canola oil
1 1/4 cup of whole wheat flour
1 teaspoon of baking powder
1 teaspoon of baking soda
1 teaspoon of ground cinnamon
1/4 teaspoon of salt
Optional fillings: old -fashioned oats, seeds, coconut, pepitas or chopped nuts
Instructions
Heat the oven at 375 degrees. Line a 12 muffin mold with muffin lining. Mix bananas, yogurt, egg, sugar and canola oil in a large bowl. Add the whole wheat flour, baking powder, baking soda, cinnamon and salt and mix. Pour the mixture into the 12 muffin cups (they will be about 2 / 3rd full) and add optional fillings.
Bake for 20-23 minutes until a toothpick inserted in the muffin comes out clean.
