This quinoa chili with a slow cooker is for the moment. Can’t you afford meat? No problem.

My biggest problem with any vegetarian chili is that he does not have the “weight” of the meat and the thickness that I am looking for in Chile. I like my chili to be generous (not light).
This Chile uses quinoa instead of meat and it works for me. I am not a fan of quinoa (as I think he has the taste of dirt) but in chili, I do not notice the taste and it makes the coherence perfect. You add it not cooked near the end of slow cooking so that it is not super pasty. He cooked in Chile.
Hey, I didn’t know that a grain could do that! It is really a great substitute for meat.
Quinoa can be found in your supermarket next to rice and other exotic grains (such as Kamut and Bulgur). Some people love it in a salad with vegetables.
This recipe is very inexpensive because you use dry beans instead of canned those. A bag of beans brings me around $ 1.
This recipe is not for a spicy pepper. In fact, he was criticized to be too light on spices. If I wanted it to be more spicy – I would double the quantities of chili and cumin powder. Don’t be afraid !!
Please share your favorite uses for quinoa.
