The roasted eggplant salad is for the summer. The eggplant is cool right now!
You have to get an eggplant and roast it. This recipe is easy and I discovered that the last eggplants on the market do not need salting to eliminate bitterness. Yes, these babies are naturally sweet.

Aubergines have a high water content with almost no cholesterol or fat and are an excellent source of fiber. They are also a good source of vitamin C, vitamin K, magnesium, phosphorus, copper, dietary fibers, folic acid, potassium and manganese.
Roasting eggplant at high temperature with balsamic vinegar launched – gives it a fairly sweet taste. I fell madly, instantly in love with this roasted eggplant and I hid it to my husband.
The dish above is before roasting it. After finishing cooking it, it becomes smaller and softer.
It is a little sad to use an oven at high temperature in summer in summer, but you can then refrigerate the results to have a fresh plant snack.
You can eat it ordinary, stuff it in a pita, mix it with cherry tomatoes and green salads or put it on rice.

Roasted eggplant recipe
Made 4 portions, ¾ cup by portion
Ingredients
1 large eggplant, chopped (about 7 cups)
3 cloves of garlic, peeled and chopped
1 small red onion, chopped
1 tablespoon of olive oil
¼ cup of balsamic vinegar
salt and pepper to taste
Instructions
Preheat the oven to 400 F. Mix the eggplant, garlic, onion, olive oil and vinegar in a 9x13x2 inch cooking dish.
Bake for 10 minutes. Take out and throw the eggplant and bake for another 15 minutes until it is softened and juicy.
Add salt and pepper to taste. Take advantage of the hot, cold or ambient temperature.
