Mexican zucchini boats are for those who love burritos but not the Burrito belly. You know what I’m talking about!
Burrito is seated in your belly and you moan: “How did I eat everything?”
These boats are like burritos without groans. You use zucchini – which replaces an excellent replacement for foods such as pasta – Discover Pasta and zucchini recipe And cooked zucchini lasagna.
I know that it is not the zucchini season but it is still there at the supermarket that awaits you. I eat squash all year round and zucchini is one of my favorites.
I make a whole casserole dish of these, then I can eat two for lunch when I want a burrito. The only problem with storage is that sometimes someone eats them when I’m not looking. You know who you are.
It also makes a nice side vegetable for other healthy foods. I served this with grilled fish that my children quickly rejected. I have prepared so many meals since March that my children cannot bear – well. It is only so many days that you can eat burgers and macaroni and cheese.
You drown the zucchini with a teaspoon and you do not use the interior. I have not yet found a good use for the part of the squash. Suggestions?
It is important to cook them in a covered dish so that the liquid in the zucchini cooks the garnish.
The garnish makes a pile of more than one zucchini tray and I eat it all week. You can make two zucchini trays with the garnish.

Mexican zucchini boat recipe
Make 8 portions

Cooking time: 20 min
Ingredients
4 large zucchini
1 tablespoon of olive oil
1 red pepper, caroted and chopped
½ red onion, chopped
1 cup of frozen corn, thawed
1 jalapeno, sown and diced
1-15 ounce can beans black, drained and rinsed
1 cup of fresh salsa
2 teaspoons of cumin
1 teaspoon of chili powder
2 ounces grated cheddar cheese
Instructions
Preheat the oven to 400 F. Spray a 9×13 ”saucepan with non-stick spray. Cut the zucchini in half length and placed in the center of each zucchini. Cumin and chili powder.
Place zucchini in the pan and fill the bean mixture. Sprinkle each half with cheese and cover the pan with aluminum foil. Bake for 20 minutes. Garnish with coriander (optional).
They do not freeze well.
