Healthy fall recipes have a squash, pumpkin, turkey, apples and more squash. This time of year is filled with tasty food which is inexpensive and accessible.

I live in “Fall Central” alias New England which is the ideal place to celebrate fall. After many years in a window without window, I now look at the brilliant colors of the fall foliage while I write this. It’s spectacular.
Fall foods are also spectacular. I drive by farm stands with a musk squash, pumpkins and tons of apples. My favorite tomatoes have disappeared but I don’t cry them long.
I did not grow up by eating squash and pumpkin, but I slowly developed a taste for many tests and errors. The best way to cook is to roast it. The flavors become more intense and the texture becomes soft and luxurious. I love roasted autumn vegetables on a pile of arugula with a pinch of vinegar.
