These gluten-free peanut butter cookies can be made with ingredients from your pantry. Nothing extraordinary here!

I literally have a ton of peanut butter. Peanut butter is one of those foods that my family cannot spend and it is incredibly nutritious.
Is peanut butter an excellent choice? Yes!!
Over the years, numerous studies have shown that people who regularly include nuts or peanut butter in their diet are less likely to develop cardiac diseases or type 2 diabetes than those that rarely eat nuts.

Now that I convinced you to love peanut butter – what about these cookies? I added sugar but these are cookies.
I also did Oat bars with peanut chocolate chocolate chips For those who want to add chocolate to their peanut butter (me!).
You can also add chocolate chips to these cookies.
To make sure that these are gluten -free – you need to buy gluten -free oats. You also want to buy natural peanut butter (only ground peanuts without added sugar or oil). Check What is the healthiest peanut butter? If you need an entry.

This recipe is so easy. A bowl, no mixer and you’ve finished. Anyone – even those who think they cannot cook – can do them.
They are not a decadent cookie – but you could wrap for a quick snack instead of a wrapped bar. They also freeze well.

Do you want to make them more interesting? Add the coconut, chopped peanuts, raisins, cinnamon, a pinch of salt in flakes for the top… ..
I love them everything because I don’t want to eat too much in one session. Sometimes boredom is a good thing.
