This recipe for frozen banana bites will solve the big problem of summer.

What is the big problem of summer? Ice. It’s everywhere! In large quantities! I shouldn’t really call an ice cream because it is delicious and cold. But, I am surrounded by my ice cream eaters and I have to reduce.

It’s easier than my peanut banana ice cream And more like a dessert than my Pop summer breakfast.

This is a combination of a cup of Reese peanut butter and a banana. I eaten them instead of the Klondike bars that my children love for their summer afternoon treat.

I can’t imagine that it took me more than a few minutes to assemble. You can use the nut butter you have on hand (almond, cashews, solar butter) and simply spread as much as you wish on banana slices.

To keep it all together before soaking it in chocolate, you have to freeze it for about 30 minutes.

Then you can use a double boiler method to melt the chocolate (or microwave). I like to heat a metal bowl with boiling water in a saucepan then melt the chocolate. I find that I do not overheat chocolate this way (unlike the microwave where I did a mess).

After soaking the bites, put them back in the freezer for another half and hour, then store in a bag or a Ziploc container.

Do you know what’s going on? You do them to get away from the heaps of ice cream, then your children see them and eat them !! No!! (Actually, yes !!!!!).

My children think that these are fun and do not notice that they are not as sweet or as large as their usual ice cream treat.

Ingredients

3 medium bananas
¼ cup of nut butter of your choice (I used peanut butter)
½ cup of semi-sucking chocolate chips

Instructions

Slice the bananas into ½ inch slices. Spread the nut butter on half of the slice and make sandwiches with bananas. Place on a cookie plate covered with parchment or waxed paper. Gel yourself for 30 minutes. Heat the chocolate until it is melted in the microwave with short power gusts or a double boiler. Dip the bites in the chocolate and put back on a cookie plate. Gel yourself for 30 minutes. Serve immediately or store for subsequent consumption in a freezer bag or container.
