Share some of my dinner ideas that are easy to do when I am solo parent.
Hi friends! How are you doing? I hope you enjoy the week so far! I have an interview with the podcast today, Pilates, and we will probably arrive in the pool. We try to live the last piece of summer before returning to school madness.
For today’s post, I wanted to share some of my favorite easy dinner ideas when I am a solo parent. Since the pilot is back with the airlines, he is back to travel more regularly while I maintain it with the crew here. When he left, meals are more relaxed. These are things that I can do in less than 20 minutes that I know that we all like. Usually, I will do something that includes leftovers so that we can enjoy it the next day for lunch.
For our family, meals will include a certain type of protein, a certain type of starch, fruit and / or vegetables. It makes it quite plug and played, and when the children have rounded meals like this, they are happier (no blood sugar) and maybe a little less collaborable? (But let’s be real, summer is an avalanche of snack all day.)
Here are some of the things I have in rotation when it’s just me and I want to cook something tasty, healthy and fast.
Easy solo parental dinner ideas
– Breakfast for dinner.
We do it at least once a week, whether the pilot is there or not, because it is a pleasure of crowd and you can customize it according to what you have. I could make gluten-free without gluten kitty waffles, pancakes (they still love these banana pancakes after all these years), French toast, and serve it with breakfast sausages, bacon or eggs like protein and fruits.
– Tacos, rice and beans.
I put the chicken in instant pot with oregano, salt, pepper, garlic powder and chicken broth, and cooked for 12 minutes on manual. I shredded it with the mixer and served with tortillas, beans, Mexican rice and Guac. I will cut the fresh fruit that we have on hand and serve it on the side.
– Spanish tortilla.
It is one of our favorites of all time. I’m going to cook the tortilla and I often serve it with sliced vegetables and Guac, and one side of fruit.
– Greek salad bowls.
This is another favorite family: the chopped salad (you can use a kit to make life easier, or simply chop the Roman, tomatoes, red onion, cucumber and add olives from Kalamata and feta), cooked chicken (roast or remaining chicken), houmous (store store or house at home), and leafy leafs (I buy Trader Joe). Serve Pita to the side.
– gluten -free chicken nuggets
I order those of Butcher And serve with salad and fruit. Very easy.
– Ramen with grated chicken or shrimp.
I’m going to buy ramen at Whole Foods (they have a few gluten -free options) and add grated chicken or sautéed shrimp and cut with fruit on the side.
– Bol of noodles sautéed.
I will fry a ton of vegetables (pepper, onion, broccoli, carrot, whatever we have in hand), and add cooked noodles and a peanut sauce with peanut butter, tamari, rice wine vinegar, sesame oil, garlic, ginger, sriracha and honey. I make the sauce while the vegetables and noodles cook, and everything is done so quickly. I generally overcome sesame seeds and coriander.
– Salmon sushi rolled bowl.
We also often have this one. It is just cooked rice (cooked in the instant pot with equal broth / water parts and rice), salmon (cooked in the air fryer), cucumber, edamame, avocado and algae.
– Egg roll in a bowl.
Just sauté with minced meat with a mixture of cabbage, garlic, ginger and assistance with tamari, sriracha and sesame oil. Garnish with everything except the seasoning of the bagel. I will be with fresh fruit – everything we have on hand.
– House pizza.
Dough, sauce, pepperoni, cheese and served with a salad or roasted vegetables.

We particularly like the biological chicken sausage of Costco, peppers and broccoli
– Kevin sauce meal.
This is another favorite fan. Kevin’s makes incredible sauces – I buy them to Prosperous market – And I’m going to cook a ton of vegetables, add chicken, steak, salmon or shrimp and add the Kevin sauce before serving on the rice. We love the Teriyaki, the Korean barbecue and the coconut curry.
– Turkey meatballs with pasta, sauce and vegetables.
I usually do turkey meatballs Advance and freeze them for an easy / quick meal. This is my recipe for choice
