Easy house salsa

I love This time of year because I can never have enough tomatoes. Here are two of my favorite summer recipes – How to grill tomatoes And Fresh tomato salad.

I am known to ride with a salt shaker in my car so that I can taste a fresh tomato from a farm stand without having to wait to go home.

Tomatoes !!

You cannot underestimate the taste of a really fresh tomato. When they start rolling, I start to eat them for breakfast, lunch and dinner.

I cultivated my own tomatoes (which is really wonderful) but a year after having carefully worked in my garden – I made the mistake of taking a vacation in August. Guess who got my cultivated tomatoes? My neighbor !! After this experience, I do not cultivate them unless I know that I will be there for harvest.

This recipe uses harvest without cooking (because who wants to cook now). All you do is launch the ingredients of your food processor, Whirrrr, and you are ready to eat.

I use jalapeno peppers to pass the heat here. Samp up your pepper before using it to determine how much you have to add. I use a hot pepper (without seeds) for the 4 cups of salsa here, so I do not overwhelm the tomatoes, but if your pepper is not so hot, you can use more.

One of these condiments is actually good for you (unlike Mayo for example).

I serve mine with almost everything – eggs, chicken, steak, chips, lawyers, on toast – you call it!

Fresh tomato salsa recipe

Ingredients

1 pod garlic
½ jalapeno pepper with seeds or to taste
2 pounds of tomatoes, cut in half
¼ red onion
½ cup of fresh coriander
½ teaspoon of red vinegar
½ lime, juice
salt and pepper to taste

Instructions

Maisse the garlic and jalapen in the food processor. Add the tomatoes, red onion, coriander, vinegar and lime juice. Mix to the desired consistency and correct salt and pepper.

Stay in the refrigerator for a week. I store mine in Mason jars.
