This easy healthy banana bread recipe is for those of us with too many ripe bananas. I think this is an easy problem to solve.

The last time I went to the store (Monday), I filled my cart to the brim. I bought a ton of food and I think I thought I had a family of monkeys – because in the middle of the week – I was swimming in ripe bananas.

This is the type of problem that I like to have. Over the years, I have created many recipes for ripe use of bananas like my fast banana bread And Banana Quesadilla Snack.

No problem!

Except that I had a problem because I was out of the whole wheat flour (and there was no find).

Whole wheat flour is delicious in bananas bread because bananas are so assertive in their flavor that they mask the bitter flavor in whole wheat that people do not like. The banana bread is also dense (not soft), so the whole wheat does not harm the texture.

If you want to use whole wheat flour – simply add 1 cup of whole wheat and 1 cup of any use to replace 2 cups of versatile flour in this recipe. If the mixture seems too thick (the whole wheat flour absorbs more liquid), add 1/4 cup of milk (the almonds will work!).

This recipe is so easy because you only use one bowl (and no mixer!). Crush three of the bananas in a bowl.

Take two other bananas and cut them into pieces. Use five bananas!

Large bananas add a level of flavor and humidity you need because the butter of this recipe is considerably reduced compared to the bread with ordinary bananas.

I added a stick of butter in the past when I make a super luxurious version, but today, I only use two tablespoons of butter for flavor.

Of course, this recipe is only a base. Add the nuts or chocolate chips for a more decadent version.

My family appreciated this simple version and will no longer eat any of the bananas that I bring home, so I will make them more banana bread. Oh dear!

Ingredients

5 ripe bananas (can be too ripe)
2 tablespoons of melted butter
1/2 Packed brown sugar
1 large egg
1 teaspoon of vanilla
2 cups of all use flour
2 teaspoons of dough powder
1 teaspoon of baking soda
1/4 teaspoon of salt

Instructions

Heat the oven at 350 F and wrap a bread pan with a cooking spray. Peel and crush 3 bananas in a large bowl. Cut the last 2 bananas into pieces. Add the melted butter, sugar, egg and vanilla and mix well.

Add the flour, baking powder, baking soda and salt and mix until incorporation. Fold in the banana pieces. Put the dough in a bread saucepan and cook for an hour until a butter knife inserted in the center of the bread comes out clean.

Cool and enjoy it!
