I am impossible to ignore the heaviness of recent events: the loss of Charlie Kirk, the tragedy of the school shooting, the woman who was killed on public transport and remembering September 11. It was a lot. If you feel sadness or heaviness, know that I see you, I feel it too, and I send you a big hug through the screen.

In the spirit of focusing on some of the simple joys, I wanted to share something a little lighter today: easy and healthy airbnb recipes. I wanted to publish this since our return from Spain and now we are in September. No time like the present 😉

Why we cook at Airbnbs while traveling

When we travel, we have learned that eating at the restaurant for each meal simply does not work for us. It becomes expensive quickly, restaurant meals can be heavy and children do not exactly like to sit at a table three times a day.

What works better for us: eat outside for a large meal a day (usually lunch or dinner), and enjoy fast bites, or make the rest of our meals simple and fresh in the airbnb. Not only is it more favorable to a budget, but it is also fun to shop for local markets, to take advantage of regional specialties and to meet for a relaxed family dinner. In addition, the restaurants and the cafes we dinner are great; It is better to make follies on a larger and incredible meal than a bunch of poor places throughout the day.

During our trip to Spain, some of my favorite memories were to cook alongside my friend Sam. She would make a dish or two, I would do something in the airbnb and we would do it, and the children would run while we shared good food, good wine and good company. This is what vacation meals should look like! We were impatiently awaiting our family dinners, and as they live there, they didn’t need to feel that they must all have feeding us or going to restaurants several times a week. We shared the cooking and cleaning load, and it was great.

When we check in an airbnb, I almost always know these staples:

Granola or cereals

Yogurt

Almond milk (or other milk of choice)

Coffee (the Instant Decafa in Spain was 2 euros and had a celestial taste)

Sparkling water and waters

Fresh berries and seasonal fruits

Eggs

Bread

Nutella or jam (because children)

Protein (roasted chicken, canned tuna or sardines, Spanish tortilla, etc.)

Snacks

Supplements: I always bring my Daily nutritional support powder + vitamins with me

Easy airbnb breakfast ideas

Perfect yogurt with Granola + Berries

Eggs and fruit toast

Protein pudding with berries

Spanish tortilla (house or pre-made of a local market)

Egg saucepan (great if you stay in the same place for a week or more)

Quick lunch and dinner recipes

These meals meet with a minimum of preparing and local ingredients:

Roasted chicken enchiladas

Large salad bowls with green vegetables, vegetables, beans or tuna, olive oil and lemon

Dinner in charcuterie style with local cheeses, meats, olives, bread and vegetables

Night of simple pasta: pasta, olive oil, garlic (or garlic powder), seasonal vegetables and proteins such as shrimp or chicken

Grilled protein + vegetables (if the airbnb has an outside grill)

Hired Greek salad (cucumbers, pepper, onions, olives, artichokes, dried tomatoes, feta, herbs like mint and rosemary, chicken and lemon vinaigrette)

We love a snack break in the middle of the afternoon or a happy hour:

Fresh fruit + cheese plate

Guacamole and Houmous with trenched vegetables + crackers

Olives + nuts

Chips with salsa

Wine or sparkling of alcohol water

Traveling should not mean blowing your budget or feeling slow after too many heavy meals. With a quick grocery trip and some simple recipes, you can taste healthy and delicious meals directly in your airbnb.

I think there is something so special to come together around the table with family or friends, and sharing the food you have prepared together. This makes the journey even more memorable.
