This cottage cheese waffle recipe is made with a blender and I love how simple it is.

I happen to love using my waffle iron for all kinds of things other than waffles. If you haven’t tried my waffle iron banana bread or my grilled apple in waffle iron you are missing something.

This recipe allows you to pack a waffle (which is usually carbs) with protein because you’re using cottage cheese and eggs.

You can make them gluten-free if you use certified gluten-free oats.

The best part is how easy it is to add it to the waffle maker from the blender. You don’t make a big mess like you do with a spoon: just pour everything into the blender carafe.

Sometimes I make them for dinner because that’s how I roll. My kids love breakfast for dinner because we usually run out the door when we’re supposed to be eating breakfast.

You can also prepare them as pancakes if you don’t have a waffle iron. But I would suggest buying one because they are ridiculously fun. I don’t know why I’m so fascinated with my waffle maker, but any time I can use it, I do. I think I’m bored with the same old food, so using a device makes things fresh.

I also love my panini maker for sandwiches and my blender. I wouldn’t want to go back to the days before electricity and live without these little kitchen appliances. I’m a big fan of progress even if it means continuing to hide my kids’ screens.

Ingredients

1 cup whole oats
1 cup 1% cottage cheese, no salt added
3 large eggs
½ teaspoon baking soda
½ teaspoon cinnamon (optional)

Instructions

Heat a waffle iron and coat it with non-stick spray. In a high-powered blender, puree the oats, cottage cheese, eggs, baking soda and cinnamon. When there are no pieces left (oats or cottage cheese), pour into the waffle iron. Cook for 3 to 4 minutes until steam stops escaping from the iron.
