This chocolate pudding recipe for chia seeds is intended for those who want to dip their toes in the chia seed pool. About 4 years ago, I wondered why someone would use chia seeds for anything.

All that I could think of with Chia Seeds was Chia pets. These cute small terracotta bouggers did not look edible.
But, since then, I have tried to eat chia seeds in all kinds of forms. My last favorite dish is my Pudding recipe with coconut chia .
A tablespoon of chia seeds has more calcium than a glass of milk, more omega-3 than salmon and more antioxidants than blueberries.

I decided to try chocolate pudding because who does not like chocolate pudding? Chia seeds are excellent as a thickening agent, so you don’t have to cook the milk to get the right pudding consistency.
It is rare to find a tasty pudding which is rich in calcium, iron, fiber, manganese, magnesium, selenium and vitamin B6.
Jello cannot touch this.
Since I started to eat chia seeds, I have read a wonderful book on the race, Born to run: A hidden tribe, superathletes and the largest race that the world has never seen by Christopher McDougall (see below). In this document, the Tarahumara Indians run hundreds of kilometers fed on chia seeds (as well as corn and other foods).
I also like to use chia seeds in my Night oatmeal with chia seeds As it makes the mixture thick and creamy.
You can find chia seeds in the natural food section of your grocery store and they are not cheap – a small bag cost me $ 7. Any seed product is high because they are so difficult to harvest. Consider them as an investment in your health.
When I did this for the first time, I didn’t have a powerful mixer and it was a bit grainy. Now that I have a mixture (a vitamix would also work), it comes out perfect and my children eat it. When I used the high power mixer, it was instantly thick (no need to wait to eat it!)

Chocolate chia seed pudding recipe
Made 4 – 1/4 Puddings cup
Preparation time: 5 min
Cook time: 30 minutes in the refrigerator (optional)
Ingredients
3 tablespoons of cocoa powder
3 tablespoons of brown sugar
¼ cup of chia seeds
1 cup of milk (whatever you love almonds, soy, etc. – I used a 2%cow’s milk)
Instructions
Mix the cocoa powder, the sugar, the chia seeds and the milk in a mixer for 5 minutes until the chia seeds are sprayed. Pour into small oars and place in the refrigerator.
Cool or eat at room temperature.
