Every year I try to add something healthy to the holiday mix. Every year, no one reads my missives.

The worst month for Snack Girl is December. For what? I spend most of my time advocating for fruits and vegetables and December is not the time of year when anyone wants to hear my ideas.
January is my best month as we all come to our senses and start eating healthier. Then the year slowly descends with peaks and valleys until we get to December (my behind).
Do I give up? No! I continue to try to come up with holiday dishes that incorporate fruits and vegetables like my Strawberry Santa Hats and my Vegetarian Christmas tree.
You won’t see crunchy, buttery Christmas cookies on this website. No, I’m sharing CELERY with you.

Celery can be a holiday food if you dress it up. I made these adorable reindeer snacks for my teenagers and they ate them and smiled. If you can make a thirteen year old boy smile with celery, why not?

Celery and peanut butter is a classic. You get the crunch of the celery and the nice creaminess of the peanut butter. Besides the fact that this snack is delicious, you can’t really be healthier. We all need a little protein and healthy fats to accompany our vegetables.
I eat peanut butter and celery – celery and cottage cheese – celery and ranch dressing – or just celery! I found that if I cut it up and put it outside, everyone eats it. The key is to make it available.
Celery is truly wonderful because unlike lettuce, celery keeps in the refrigerator for at least a week. You’ll always find it in my crisper drawer when I can’t get to the store and need a fresh vegetable.
What to do with celery?
